INGREDIENTS

3 cups rolled oats

1 ½ cups oat milk (or your favorite non-dairy milk)

2 ripe bananas, mashed

1/3 cup packed brown sugar

2 large eggs, lightly beaten

1 tsp. baking powder1 tsp. ground cinnamon

½ tsp. almond extract

½ cup toasted chopped pecans

6 Probiogen Daily Digestive Balance capsules, opened and emptied

 

DIRECTIONS

  1.  Preheat oven to 375 degrees Fahrenheit. Coat a muffin tin with cooking spray.
  2.  Combine all ingredients except the pecans into a large bowl. Then gently fold in the pecans.
  3. Divide the mixture among the muffin cups and place bake in the oven until a toothpick inserted in the center comes out clean, about 25 minutes.
  4.  Cool in the pan for at least 10 minutes, then turn out onto a wire rack. Serve warm or at room temperature.
